| Method for Camarones a la Cubano |
• Roast the onion, tomatoes and garlic until soft
and the flavors have been concentrated. Do not
allow the onions and garlic to burn. Combine the
remaining ingredients with the vegetables and
puree in a blender.
• Have ready 28 pc. US-15 shrimp (peeled). Skewer
7 pc. per order. Generously brush the marinade
onto the shrimp. Let sit for 30 minutes. Sprinkle
with a little salt and pepper and grill the skewers
on the hot part of the grill. Some of the marinade
might stick to the grill, this is okay. Cook for
2-3 minutes and flip the shrimp. (With this short
cooking time it is important that your grill is
hot in order to caramelize the marinade).
Continue to cook the shrimp until medium.
Remove from heat.
• Arrange the shrimp around white rice, and garnish
with sautéed sweet (black and soft) slices of
plantains. The dish can be garnished with crema
made with sour cream that is mixed with a touch
of lime juice and a drop of your favorite hot
sauce. |

1 small White Onion
6 Roma Tomatoes
3 toes Garlic
1/2 cup fresh Orange Juice
1 tsp fresh Lemon Juice
1 tsp fresh Lime Juice
1 pinch ground Clove
1 pinch ground Allspice
1 pinch ground Cinnamon
1/4 tsp ground Cumin
1 tsp Salt
2 tbsp Ancho Powder
1 tsp Dry Mexican Oregano
1/4 cup Dry White Wine
1/4 cup blended oil mix of Canola and
Olive Oil
3 leaves of dried Herba Santa |
