| Lavender Crusted Rack of Lamb |

| Ingredients for Lavender Crusted Rack of Lamb |
1 lb Lamb
1 Sprig Fresh Thyme
1 tbsp Extra Virgin Olive Oil
1 tbsp Honey
1 cup Red Wine
1/2 cup Veal Stock
2 tbsp Lavender
3 pieces of Black Mission Figs
1 medium Head of Frisee
3 Blood Oranges
1 tbsp Orange Juice
1/2 cup of Sherry Vinegar
Sea Salt, to taste

| Method for Lavender Crusted Rack of Lamb |
• Pre-heat the oven to 400°F.
• Rub the lamb with olive oil, salt, pepper and
fresh herbs. Position meaty side up in roasting
pan and roast at 400°F for about 5 to 8 minutes.
Remove and let rest for 5 minutes.
• In a medium sauce pot, sauté shallots until soft.
Add the red wine and the honey and reduce until
barely detectable. Add the figs and easily stir into
the mixture then add the veal stock. Let simmer
for 2 minutes and remove from the heat.
• In a bowl mix the orange juice, the sherry
vinegar, olive oil, blood orange juice, salt and
pepper to taste.
To Plate
• Place the lamb first on a nice platter surrounded
with mission figs. Top with frisee salad and
drizzle with the blood orange vinaigrette.
