Apple Salad
Serves 2
Ingredients for Cranberry Vinaigrette
1/2 cup Cranberries
1/2 cup Port
1/2 cup Sugar
1/2 cup Oil
Ingredients for Salad
1 Red Apple (Fuji), or one with good acidity
1 Head Belgian Endive
1 cup Baby Arugula
2 tbsp Toasted Walnuts
2 tbsp Crumbled Blue Cheese
2 tbsp Lemon Vinaigrette
dash Salt
dash Pepper
Method for Lamb Marinade
• Place cranberries in saucepan with port and sugar and simmer until the cranberries burst.
• Place mixture in a blender and slowly drizzle oil into the blender.
• The mixture should emulsify. Strain vinaigrette through a fine strainer.
Method for Salad
• Core the apple; then thinly slice apple in 1/2 moons on a Mandoline.
• Cut endive in half lengthwise core and slice thinly.
• Mix endive, walnuts, blue cheese and arugula in a salad bowl.
• Add vinaigrette and mix gently.
• Salt and Pepper to taste.
• Layer apple slices and salad on plate. Drizzle with cranberry vinaigrette.
