| Ingredients |
6 Slices White Bread, crusts removed
2 Eggs
1/4 c Heavy Cream
1 T Fresh Lemon Juice
1/2 t Dry Mustard
To taste Salt
1 t Minced Garlic
1 lb Lump Crabmeat, picked clean
4 Green Onions, finely chopped
4 Strips Bacon, cooked crisp and crumbled
2 c Dry Bread Crumbs, for coating
Vegetable Oil, for frying
1 t Cajun Spice Blend

| Method |
| Grind bread crumbs in a food processor
Add the eggs, cream, and lemon juice, form a batter.
Remove to a bowl, and add all ingredients except oil and
dry breadcrumbs.
Form into cakes, coat with dry breadcrumbs
SautĂȘ in 1/2 inch of oil until golden brown. |
