| Butternut Squash Soup |

| Ingredients |
1 Large Butternut Squash, peeled, seeded, diced and cubed (1 inch cubes)
1 Large, Sweet Onion, chopped
1 Leek (white), chopped
1 qt Chicken Stock
1 C Crème Fraiche or Whipping Cream
3 Strips of Smoked Bacon
White Pepper to taste
Salt to taste
2 T Organic Honey
3 Stalks of Celery, peeled and chopped |

| Method |
| Sauté sweet onion, bacon, and celery.
Add peeled and seeded butternut squash and chicken stock.
Simmer until squash is soft; add heavy cream, salt, white pepper, and honey.
Blend together and pass through strainer.
Garnish with chives and pancetta or smoked duck. |
