| IRON SKILLET MUSSELS |

| Ingredients |
1 oz Olive Oil
1 lb Mussels
2 oz Country Ham, Julienne
1 oz Garlic
2 oz Shallots
2 oz White Wine
1 oz Collard Greens
2 oz Tomato Concasse
1 oz Fresh Herb Mix

| Method |
| Heat medium sauté pan over medium high heat
Add olive oil, mussels, ham, garlic and shallots. Toss well.
Add white wine, collards, tomato concasse and herbs.
Cover with a second sauté pan, or lid.
Simmer 2 to 3 minutes.
Serve immediately. |
