CURRIED CARROT WITH CRAB SOUP
Ingredients
5 lbs Carrots( peeled and sliced)
3 T Garlic, minced
3/4 c Onion, minced
3 T Butter
1 T Curry
3 c Heavy Cream
1 c Crab Meat
2 cans Chicken Broth
1 t Salt
Roux*
Method
  • In sauce pot saute onion, garlic, and butter until onions are soft.
  • Add carrots, curry and salt.
  • Pour water in pot until the water line is 2 inches above carrots.
  • Bring to a rapid boil , then simmer until carrots are very soft.
  • Using a hand mixer, mix carrots until smooth and add chicken broth.
  • Bring back to simmer for 15 min.
  • Add roux, then cream mixing well.
  • Remove from heat, add crab.

    *Roux- a mixture of equal parts flour and warm butter, cooked slowly over low heat ; used to thicken sauces, gravies, & soups
