| CAROLINA’S SIGNATURE PECAN BRITTLE BASKET FILLED WITH VANILLA BEAN ICE CREAM AND FRESH SEASONAL BERRIES |

| Pecan Brittle Basket Ingredients |
1/2 lb Butter
3/4 c Sugar
1 c Corn Syrup
1/2 t Vanilla
1 c Pecans
3/4 c Flour
1/4 t Salt

| Directions |
| Melt butter, sugar and corn syrup, together.
Crush pecans in food processor
Sift together flour and salt three times
Bring sugar and corn syrup mixture to a boil, add flour and
pecans, add vanilla mixture
Using ice cream scoop, spoon onto lined baking sheet.
Bake at 275 degrees for 15 – 20 minutes or until golden brown.
Remove from oven and mold over cup.
Allow to cool 10 seconds and remove from cup – should
harden immediately
When ready to serve, spoon one 4oz. scoop of vanilla bean ice
cream into basket.
Add fresh seasonal fruit as follows: 1/4 cup strawberries 1/4
cup fresh blueberries 1/4 cup kiwi 1/4 cup mango
1/4 cup pineapple .
Top with homemade whip cream. |
