CAROLINA’S SIGNATURE PECAN BRITTLE BASKET FILLED WITH VANILLA BEAN ICE CREAM AND FRESH SEASONAL BERRIES

Pecan Brittle Basket Ingredients
1/2 lb Butter
3/4 c Sugar
1 c Corn Syrup
1/2 t Vanilla
1 c Pecans
3/4 c Flour
1/4 t Salt
Directions
  • Melt butter, sugar and corn syrup, together.
  • Crush pecans in food processor
  • Sift together flour and salt three times
  • Bring sugar and corn syrup mixture to a boil, add flour and pecans, add vanilla mixture
  • Using ice cream scoop, spoon onto lined baking sheet.
  • Bake at 275 degrees for 15 – 20 minutes or until golden brown.
  • Remove from oven and mold over cup.
  • Allow to cool 10 seconds and remove from cup – should harden immediately
  • When ready to serve, spoon one 4oz. scoop of vanilla bean ice cream into basket.
  • Add fresh seasonal fruit as follows: 1/4 cup strawberries 1/4 cup fresh blueberries 1/4 cup kiwi 1/4 cup mango 1/4 cup pineapple .
  • Top with homemade whip cream.
