HONEY GLAZED SCALLOPS WITH PEACH SALSA
2 Servings
Ingredients for Honey Glaze
2 T Honey
1 T Soy Sauce
1 T Lime Juice
1 T Fresh Ginger, minced
Method
  • Use the largest scallops you can find, 10-12 each for 2 servings, place them on wooden skewers.
  • Marinate them in the glaze for 30 minutes.
  • In a clean bowl combine all the ingredients for the salsa, store chilled.
  • In a hot, non stick saute pan, sear the scallops for 3-4 minutes on each side until just opaque through the middle.
  • Serve the scallop skewers over rice pilaf or sticky rice.
  • Top with peach salsa and garnish with cilantro sprig.
  • Ingredients for Peach Salsa
    1 c Peaches, 1/4' dice
    1/2 c Red Bell Pepper, 1/4" dice
    1/2 c Green Onions, chopped
    2 T Lime Juice
    2 T Cilantro, chopped
    1 t Jalapeno, minced, no seeds
    2 t Fresh Ginger, minced
    1 t Garlic, minced
    To Taste Salt and Pepper
