| Ingredients for Chili Spice Rub for Mahi |
1 T Chili Powder
1 t Cayenne Powder
1/2 t White Pepper
1 T Paprika
1 T Oregano
1 T Cumin
1 t Onion Powder
1 t Kosher Salt

| Ingredients for Chili Aoili |
1 c Mayonnaise
1 T Chili Powder
1 t Tabasco
|
| Ingredients for Watermelon Salsa |
2 c Watermelon, small dice
1 T Jalapeno, minced
2 T Cilanto, chopped
2 T Red Onion, small dice
1/4 c Lime Juice
To Taste Salt and Pepper

| Ingredients for Tacos |
4 each 8" Flour Tortillas
3/4 c Shredded Iceberg Lettuce
1/2 c Diced Tomatoes
Lime Wedge or Wheel
6 oz Mahi Filet (per person)

| Method |
| Liberally rub the mahi with the chili spice, in a hot non stick saute pan sear until done through the middle, about 5 minutes each side.
While the fish is cooking place all the ingredients in a mixing bowl for the watermelon salsa.
Store chiled.
Combine the ingredients for the Chili Aoili.
Store chilled.
Heat the flour tortillas in the microwave for 15-20 seconds until warm and soft.
Place 1 tsp. of the chili aoili down the center of the tortilla, next place the mahi, which has been shredded, the tomatoes, lettuce, and the watermelon salsa.
Garnish with lime. |
