| Blueberry Rum Porkchops |

| Ingredients |
8 to 10 lbs pork loin roast
2 C fresh blueberries
1 C Myers rum
1 C Riesling
2 C brown sugar
2 C granulated sugar
3 C apple juice
1 t chili flakes
2 T balsamic vinegar

| Method Sauce |
| Place all ingredients in a large saucepan and reduce on medium heat
for 2 hours, stirring occasionally. Sauce will thicken to coat the back
of a soup spoon. |
| Method |
| Place pork roast on a baking pan and lightly season with Kosher salt
and cracked black pepper.
Place in a preheated 300-degree oven for 45 minutes. |
