LAMB SAUSAGE WITH GOLDEN RAISIN COMPOTE
Ingredients For Sausage
1 lb Lamb
1/2 lb Pork
1 T Thyme
1 t Crushed Red Pepper
1 t Sage
2 T Garlic
2 T Shallots
2 T Salt
Method
  • Grind all meat together.
  • Add all remaining ingredients.
  • Portion to desired size.
  • Cook over medium heat in a sauté pan.
  • Serve over golden raisin compote.
  • Ingredients For Raisin Compote
    1 c Raisins
    2 T Garlic
    1/2 each Red Onion, Small Dice
    1 c Chicken Stock
    1 c White Wine
    1/4 c Sugar
    1 t Salt
    Method For Golden Raisin Compote
  • Combine all ingredients in sauce pan.
  • Reduce by half.
  • Let cool.
