| Ingredients For Sausage |
1 lb Lamb
1/2 lb Pork
1 T Thyme
1 t Crushed Red Pepper
1 t Sage
2 T Garlic
2 T Shallots
2 T Salt

| Method |
| Grind all meat together.
Add all remaining ingredients.
Portion to desired size.
Cook over medium heat in a sauté pan.
Serve over golden raisin compote. |

1 c Raisins
2 T Garlic
1/2 each Red Onion, Small Dice
1 c Chicken Stock
1 c White Wine
1/4 c Sugar
1 t Salt

| Method For Golden Raisin Compote |
| Combine all ingredients in sauce pan.
Reduce by half.
Let cool. |
