CAFÉ SUZANNE SIGNATURE CRAB CAKES
Ingredients
1 lb Jumbo Lump Crabmeat
(Cleaned and picked)
1 each Green Pepper, diced
1 each Small Onion, diced
1/4 Stalk Celery, diced
2 each Whole Eggs
1 c Mayonnaise
1/4 c Dijon Mustard
2 c Crushed Saltines
1 T Lemon Juice
1/8 t Worcestershire
1/4 t Tabasco (optional)
Method
  • In a large mixing bowl combine all ingredients with the exception of the crabmeat.
  • Blend together thoroughly, gently fold in the crab.
  • Portion into 3- 1oz patties.
  • Pan sautĂ© in a lightly oiled skillet until golden brown on both sides.
  • Garnish with a fresh vegetable slaw.
  • Complimented with a dill dijonaise sauce.
