COWBOY STEAK
INGREDIENTS FOR BEEF TARTAR:
1 each 30 oz.Dry Aged Rib Eye
2 each Fingerling Potatoes, quartered
2 each Baby Beets, roasted
10 each Haricot Vert, cleaned and blanched
6 each Chanterelle Mushrooms
4 oz Veal Stock or Glace
METHOD:
  • Season the rib eye heavily with salt and fresh ground black pepper.
  • Grill to desired temperature.
  • Blanch or roast your baby vegetables.
  • Season with salt and pepper.
  • Sauté the mushrooms in whole butter and season.
  • Add the veal stock to the mushrooms and reduce by half.
  • Place the baby vegetables on the plate and position the cowboy steak on top of them.
  • Sauce the steak with the mushroom stock mixture and serve.
