VEAL MARSALA

Ingredients
4 Medallions Provimi Veal
2 T Butter
4 oz Flour
1/2 c Beef Stock
3 oz Imported Sweet Marsala Wine
1/2 lb Fresh Mushrooms
1/4 c Green Onions
1 lb Fettuccini
pinch Salt and Pepper
Method
  • Bring 3 gallons of water to boil including 2 ounces of salt.
  • Strain pasta stock with ice water.
  • Dredge medallions of provimi veal into flour and sauté in pan of hot clarified butter.
  • Turn veal over and add sliced fresh mushrooms and green onions.
  • Deglaze with imported sweet marsala wine then add beef stock.
  • Reduce until desired consistancy.
  • Add pinch of salt and pepper.
  • On large oval platter add half plate of fettuccini.
  • On other half add 2 medallions of veal and then spoon on remaining sauce on both pasta and veal.
