| Ingredients |
4 Medallions Provimi Veal
2 T Butter
4 oz Flour
1/2 c Beef Stock
3 oz Imported Sweet Marsala Wine
1/2 lb Fresh Mushrooms
1/4 c Green Onions
1 lb Fettuccini
pinch Salt and Pepper

| Method |
| Bring 3 gallons of water to boil including 2 ounces of salt.
Strain pasta stock with ice water.
Dredge medallions of provimi veal into flour and sauté in
pan of hot clarified butter.
Turn veal over and add sliced fresh mushrooms and green
onions.
Deglaze with imported sweet marsala wine then add beef
stock.
Reduce until desired consistancy.
Add pinch of salt and pepper.
On large oval platter add half plate of fettuccini.
On other half add 2 medallions of veal and then spoon on
remaining sauce on both pasta and veal. |
