| Cantaloupe and habañero BBQ Baby Back Ribs |
| Yields: 4-5 servings |

| SAUCE |
15 oz bottle of Cattleman’s BBQ sauce
15 oz bottle of Open PIT BBQ sauce
1/2 red onion, medium diced
1 Habañero chili, finely chopped
1/2 cantaloupe, medium diced
2 T cilantro, chopped
3 garlic cloves, finely chopped
Juice from 2 limes

| RIBS |
4 full slabs of baby back ribs
1/4 C Mo-Rockin Spice (available at Eddie Matney’s)
1/2 T Olive oil
to taste salt and pepper

| METHOD |
| Combine all of the above in a saucepan and simmer
for 30 minutes. |
| METHOD |
Rub ribs with olive oil and heavily season them with Mo-Rockin
Spice and salt and pepper.
Grill ribs on both sides.
Place ribs in baking pan and cover completely with
prepared BBQ sauce.
Cover pan with plastic wrap then foil; bake for 2 1/2 hours at
350º or until meat is falling off of the bones. |
