Smoked Duck Breast with Cherry Sauce
Yields: 6 6 oz. servings
INGREDIENTS
6 each 4 oz. fresh duck breasts
12 oz dark pitted cherries
12 oz duck or chicken stock
4 oz red wine
2 oz whole butter
2 oz roux
METHOD
  • Combine above into brine. Mix and plate upon duck breast for 30 minutes.
  • Place duck breast into smoking unit for 15 minutes. Remove from smoker and cook in 400ยบ over for 10 to 12 minutes for medium bake. Let rest.
  • In sauce pan over medium heat, place red wine and cherry juice. Reduce by 2/3. Add duck or chicken stock and reduce by 1/3 again. Bring stock to simmer and bind with roux. Adjust seasoning and cook for 15 minutes. Skim sauce and add butter to combine. Add cherries and adjust seasoning.
  • Slice duck breast and coat with sauce. Season with toast points and red cabbage slaw.

    2 oz granulated sugar
    2 oz salt
    1 oz orange juice concentrate
    1 t white pepper
