| Baked Potato Pie |

| INGREDIENTS |
15 each Russet potatoes
3 C Sour Cream
4 C Heavy Cream
5 ea Roasted Anaheim, peeled and diced
to taste Salt and Pepper
2 C Montery Jack Cheese, shredded
2 C Cheddar Cheese, grated
20 ea Chive sticks, brunoise

| METHOD |
| Roast the potatoes in a 350 degree oven for 55 minutes.
Large dice the potatoes, and mix with all the ingredients.
Place in a skillet bowl. Roast in a 500 degree oven for 10 minutes.
Top with more grated cheese and chives. |
