| CHICKEN MARSALA |

| INGREDIENTS |
2 chicken breast halves
2 oz extra-virgin olive oil
1 t shallots, chopped
pinch Kosher salt
pinch black pepper
4 oz marsala wine
1 oz aged balsamic
1/2 oz sweet butter
7 oz mashed potatoes
5 oz Louise’s vegetables
1 oz parsley, chopped
2 oz mushrooms, sliced
1 white entrée plate

| TO FINISH |
| Serve on a white entrée plate.
Place mashed potatoes at 12:00 position. Louise’s vegetables at 6:00.
Place the chicken in the center. Pour sauce on the chicken.
Garnish with chopped parsley. |
| METHOD |
| Heat extra virgin olive oil in a sauté pan. Cook chicken 1/2 of the
way. Season with salt and pepper.
Add shallots and mushrooms. Sauté for 40 seconds. Add marsala
wine. Reduce by 1/2. Add aged balsamic. Finish with butter. |
