Farinata Ligurian Chick-Pea Flat Bread
INGREDIENTS
1/2 c. chick pea flour
1-3/4 c. water
1 tsp. salt
extra virgin olive oil
thinly sliced onions
fresh rosemary
black pepper
METHOD
  • Place flour and salt in a bowl and whisk in water gradually to avoid lumps.
  • Leave to rest 1 hr.
  • Preheat oven to 500°F. Choose a flat low sided 12” pan.
  • Oil generously. Pour in batter to a depth of no more than 1/4”.
  • Stir gently to mix in excess oil.
  • Sprinkle with onions & rosemary.
  • Bake 20 min. until golden brown & crisp.
  • Drizzle with more oil & ground black pepper.
  • Cut into wedges & serve hot as an appetizer.
