| Farinata Ligurian Chick-Pea Flat Bread |

| INGREDIENTS |
1/2 c. chick pea flour
1-3/4 c. water
1 tsp. salt
extra virgin olive oil
thinly sliced onions
fresh rosemary
black pepper |

| METHOD |
|
Place flour and salt in a bowl and whisk in water gradually to
avoid lumps.
Leave to rest 1 hr.
Preheat oven to 500°F. Choose a flat low sided 12” pan.
Oil generously. Pour in batter to a depth of no more than 1/4”.
Stir gently to mix in excess oil.
Sprinkle with onions & rosemary.
Bake 20 min. until golden brown & crisp.
Drizzle with more oil & ground black pepper.
Cut into wedges & serve hot as an appetizer. |
