| Chocolate Icing |

| Ingredients |
2 cups sugar
3 sticks butter
11 oz unsweetened chocolate
18 oz evaporated milk
1 1/2 tsp vanilla

| Method |
| Cut butter into one inch cubes. Refrigerate.
Mix sugar and milk in large heavy saucepan and bring to a boil over medium heat.
THIS STEP IS CRUCIAL TO THE RECIPE. Reduce heat slightly then allow mixture to boil vigorously for at leat nine minutes, no more than twelve minutes. Let mixture boil undisturbed. Do not stir or icing will fail to thicken properly.
Remove pan from heat, add chocolate, vanilla and butter then stir with a wooden spoon until all ingredients are melted adn nicely combined.
Refrigerate icing for at least three hours or overnight.
Remove from cold at least one-half hour before using.
Stir to soften cold icing before applying to cake. |
