NEW YORK STRIP STEAK SKEWERS
Ingredients for Skewers
3 lb Beef Strip Loin, trimmed of fat
24 each Bamboo Skewers, 6"
Ingredients for Marinade
1/4 c Sesame Oil
1/2 c Scallions, green part only, sliced
1 c Soy Sauce
1 c Pineapple Juice
1 c Sugar, granulated
3 each Garlic Cloves, smashed
1 oz Ginger, fresh, grated
1/2 Lemon
Method for Skewers
  • Soak skewers in cold water for 1 hour.
  • Cut beef stip loin into 2 ounce pieces (3" long x 1 inch wide x 1/4" thick).
  • Place one piece of beef on each skewer.
  • Reserve
  • Method for Marinade
  • Heat sesame oil in sauce pan.
  • Add scallions and cook 30 seconds.
  • Add remaining ingredients and bring to boil.
  • Strain immediately and cool liquid.
  • Discard solids.
  • Ingredients for Sauce
    1 lb Peanuts, dry roasted, unsalted
    2 each Jalapeno Pepper, fresh, seeds removed
    3/4 c Sesame Oil
    1/4 c Soy Sauce
    1/2 c Brown Sugar, dark
    1/2 can Coco Lopez (15 oz. can)
    1/2 c Fresh Lime Juice
    Method for Sauce
  • Chop peanuts and jalapenos in food processor.
  • Add sesame oil to make paste.
  • In order, add soy, brown sugar, coco lopez and lime juice.
  • Reserve.
  • Plating
  • Marinate skewers 8 hours or overnight.
  • Grill skewers to desired temperature.
  • Place peanut sauce in plate.
  • Arrange skewers on top of sauce.
  • Garnish with lime slices, crushed peanuts and fresh cilantro.
  • Serve with alternative white wine such as Viognier or with medium bodied red wine.
  • Also great with full bodied beer.
