| Ingredients |
3 lb veal shanks
4 celery sticks, finely chopped
1 large carrot, finely chopped
1 large onion, finely chopped
1 can of plum tomatoes, approx. 100 oz
2 C veal or beef stock
2 lemons, zest & juice
2 oranges, zest & juice
2 C white wine
to taste salt & pepper

| Method |
| Braise veal shanks for approximately 3 minutes on each side.
Add all vegetables, and sauté until tender.
Add lemon and orange zest and juice, white wine, and tomatoes.
Simmer for approximately 3 minutes.
Add beef or veal stock, salt and pepper.
Cover and simmer for approximately 30 minutes, or until tender.
Serve with risotto Milanese. |
