| VEAL CHAMPAGNE |

| Ingredients |
6 veal cutlets, lightly floured
3 T olive oil
3 T champagne
2 garlic cloves, crushed
1/2 C heavy cream
1 C mushrooms, sliced
to taste salt and pepper
fresh basil leaves for garnish

| Method |
| Heat oil in medium to large frying pan.
Place floured veal cutlets in pan and cook 2 minutes on each side.
Add crushed garlic and champagne and then immediately add heavy
cream and mushrooms.
Cook for one more minute and remove from pan into serving dish.
Add fresh basil leaves for garnish. |
