2 each 4 oz. Chicken Breasts, cleaned and trimmed
1 oz Egg Wash
2 t Coconut Chicken Flour
2 oz Coconut
2 oz Cranberry & Peach Marmalade

| Plate Presentation |
| Place on a chop plate with guest’s choice of a side item.
Serve with peach & cranberry marmalade. |
| Method |
| Dredge chicken in seasoned flour.
Dip chicken in egg wash.
Coat with coconut pressing the coconut into the chicken.
Fry at 325 degrees for 5 minutes, until done. |
