ORECCHEITTE PASTA WITH HOT ITALIAN SAUSAGE & BROCCOLI RABE
Ingredients
2 T Pomace Olive Oil
6 1 inch Pieces Hot Italian Rope Sausage
2 Cloves Sliced Garlic
2 Handfuls Broccoli Rabe (stemmed & rough chopped)
1 Cherry Pepper (cut in 1/8th & seeded)
4 oz Chicken Stock
1/2 c Grated Romano Cheese
8 oz Cooked Oreccheitte Pasta
To taste Salt & Fresh Ground Pepper
1 t High Quality Extra Virgin Olive Oil
Method
  • Place pomace olive oil in heated saute pan.
  • Add the sausage and brown on both sides.
  • Add garlic, sauté until brown.
  • Add broccoli rabe and cherry peppers.
  • Toss and sauté for 30 seconds.
  • Add chicken stock, salt and pepper and reduce by 3/4.
  • Heat cooked pasta in boiling water.
  • Add to pan & toss with romano cheese.
