| Roast Pork Loin with Guava Florida Orange Habanero Barbecue Sauce |

| Ingredients |
2 lb pork loin, boneless
1 onion, coarsely chopped
2 carrots (for mirepoix)
2 celery stalks (for mirepoix)
salt and pepper (for mirepoix)
1 t garlic, finely chopped
1 t fresh thyme, finely chopped
4 ripe guava, peeled and seeded
4 T cider vinegar
3 florida oranges, juice and zest
1 C granulated sugar
1 t coriander seeds, toasted
2 habaneros, seeded and chopped

| METHOD: barbecue sauce |
|
Place guava, vinegar, Florida orange juice, sugar, coriander seeds and habaneros in sauce pot and cook approximately 15 minutes.
Puree in blender and set aside. |
| METHOD: PORK LOIN |
|
Place mirepoix (onion, carrots and celery stalks) in roasting pan. Season pork with salt, pepper, thyme and garlic and place over mire poix. In 425 degree oven, cook till medium rare (about 20 minutes).
While pork is cooking, make barbecue sauce.

|
Let pork rest 5 minutes before slicing. Slice pork and fan onto plate. Ladle barbecue sauce over. Serve with Yuca Mash and garnish with Florida orange zest. |
