Grilled Orange Ginger Chicken with Orange Strawberry JalapeNo Salsa
Yields: 4 servings
Ingredients
4 boneless, skinless chicken breasts
3 C orange juice
1 stem fresh ginger, chopped
4 garlic, roughly chopped
2 T Dijon mustard
1 C white wine
Ingredients: SALSA
1 pt strawberries, medium dice
2 medium oranges peeled (segments & juice)
1 bunch scallions, chopped
1 red onion, fine dice
1 green pepper, fine dice
1 small jalapeño, minced with seeds
1 small bunch fresh cilantro, chopped
2 T olive oil
1 T honey
to taste Salt and black pepper
2 whole jalapeño peppers, grilled, cut in half for garnish
Method
  • Place all of the liquids in a bowl, add the ginger and garlic.
  • Place the chicken in the marinate, preferably for 3 or more hours or overnight.
  • On a hot grill, mark the chicken and finish the chicken on the grill (lower coals) or in the oven to an internal temperature of 160F.
  • Method: SALSA
  • In a large bowl combine the first 6 ingredients and mix.
  • Add the rest of the ingredients and mix gently. Salsa may be refrigerated at this point, but it is best made fresh the day you will be serving the dish.
  • Ingredients: BLACK BEAN CAKES
    2 C canned black beans
    2 cloves garlic, chopped
    bunch fresh cilantro, chopped
    2 T chili powder
    1 T cumin
    2 T red onion, finely chopped
    1 medium green pepper, chopped
    1 jalapeño pepper, chopped fine with seed
    Panko bread crumbs (Japanese bread crumbs available in specialty markets), to bind salt and freshly ground pepper, to taste
    Method
  • In food processor blend 1 cup of the black beans.
  • Add next 7 ingredients and blend bean mixture to a smooth texture.
  • Fold in 1 cup of whole black beans and add 1/3 cup breadcrumbs, or less as needed.
  • Add salt and pepper and put aside for 10 minutes till mixture is firm.
  • Form 4 patties. Sauté in a hot pan sprayed with oil until lightly browned.
  • To finish
  • On a large dinner plate place organic mixed field greens in the center.
  • Place a black bean cake on the greens and top with chicken breast.
  • Lightly sprinkle salsa over greens and chicken and top each serving with grilled jalapeño pepper. Enjoy !!
