FETTUCINE W/ CHICKEN & SUNDRIED TOMATOES
Yields: 1 serving
Ingredients
1 oz extra virgin olive oil
5 oz chicken tenders
.5 oz chopped shallots
2 oz white wine
6 oz manufacturing cream
1.5 oz sun dried tomatoes
.25 oz green onions, chopped
1 pinch kosher salt
2 oz grated Reggianito Parmesan cheese
1 serving pasta fettuccine
Method
  • Boil water. Cook pasta to desired firmness (roughly 6-8 minutes).
  • While pasta is cooking, heat 2 oz. of olive oil in a separate sauté pan.
  • Add cut chicken tenders. Season with salt & pepper. Cook in saute pan until 1/2 of the way done.
  • Add shallots - Let cook for 30 seconds
  • Incorporate white wine. Reduce by half.
  • Add manufacturing cream, sun-dried tomatoes & green onions.
  • Reduce cream by 1/3. Add cooked pasta to sauce, combine with grated Reggianito Parmesan and transfer to serving plate.
  • Garnish with chopped parsley.
