| Scottish Bridie |

| INGREDIENTS |
1 1/2 lb lean stewing beef
1 onion, diced
2 bay leaves
1 bottle Guinness
brown gravy
2 sheets of puff pastry
salt & pepper to taste
1 egg
cayenne pepper
1 shot of whiskey

Make two cups of gravy and add 1/2 teaspoon of cayenne pepper
(or more to taste), add 3 tablespoons of Scotch whiskey. Pour over Bridie and serve with your choice of potatoes and vegetables. |
| METHOD |

Brown meat and onions, add bay leaves, salt & pepper.
Add beer, simmer until meat is tender. Thicken with gravy powder.
Let mixture cool.
Cut both sheets of pastry into two, length ways. Cut approximately 3” off one end of each slice to use for decoration. Place filling in
center of pastry, fold both ends over and crimp pastry with a fork.
Cut out pastry leaves. Brush with beaten egg. Place on baking sheet and cook in oven 375 degrees for approximately 30 minutes or until pastry is a light golden brown. |
