| Britta’s Crab Cakes |

| Ingredients |
2 1/2 lb Dungeness crab meat
3 eggs, large
1/2 C cilantro
1/4 C green onion
1/4 C red bell peppers
1 T jalapeño
1 C mayonnaise
1/2 C fresh breadcrumbs

| Method |
|
Thoroughly drain the crab meat until very dry.
Finely mince the red bell pepper, green onion, and jalapeño.
Roughly chop the cilantro.
Gently fold all ingredients together. Careful not to break apart
the crab meat.
To cook, shape mixture in about 2 inch round cakes and roll in
bread crumbs.
Sear in a pan with hot olive oil until golden brown.
Finish in a 350 degree oven for about 7 minutes.
Serve immediately.
