Britta’s Crab Cakes
Yields: 20 cakes
Ingredients
2 1/2 lb Dungeness crab meat
3 eggs, large
1/2 C cilantro
1/4 C green onion
1/4 C red bell peppers
1 T jalapeño
1 C mayonnaise
1/2 C fresh breadcrumbs
Method
  • Thoroughly drain the crab meat until very dry.
  • Finely mince the red bell pepper, green onion, and jalapeño.
  • Roughly chop the cilantro.
  • Gently fold all ingredients together. Careful not to break apart the crab meat.
  • To cook, shape mixture in about 2 inch round cakes and roll in bread crumbs.
  • Sear in a pan with hot olive oil until golden brown.
  • Finish in a 350 degree oven for about 7 minutes.
  • Serve immediately.
