| CHOCOLATE LAVA CAKES |

| Ingredients |
2 T butter, softened
1/2 lb butter, 1/2 inch cubes
1/2 lb chocolate, chopped fine
4 egg yolks
4 whole eggs
1/2 C sugar
2 T cake flour, sifted
8 6 oz T-Fal molds

| Method |
|
Preheat oven to 375°.
Brush T-Fal molds with softened butter and refrigerate.
Over a double boiler, melt the chocolate and the butter together.
While chocolate is melting, place the yolks, eggs and the sugar
into the mixer on medium-high speed until tripled in volume.
Add egg mixture, folding one third at a time into
the chocolate mixture.
Fold in the flour and pour into buttered molds.
Bake at 375° for 6 minutes or until slightly souffléed.
Turn out molds and serve with vanilla chocolate chip ice cream. |
