BLACK FOREST CAKE A LA GASTHAUS
Yields: 1 cake
Ingredients: CAKE
4 oz butter
4 oz sugar
4 eggs
2 oz ground almonds (optional)
4 oz cocoa powder
2 oz flour
2 oz cornstarch
2 T baking powder
Ingredients: FILLING
1 x 1 lb can or jar cherry pie filling, drained
4 T Kirsch
1 qt heavy whipping cream
2 C chocolate shavings
Method: CAKE
  • Line a 9-inch spring form pan with non-stick baking paper and grease the base
  • Cream the butter until fluffy. Slowly add the sugar, then one-by-one the eggs.
  • Sieve flour, cornstarch,cocoa powder and baking powder and fold under the mixture. Pour the mixture into the tin and bake (convection oven 375ª-400ªF, gas oven 300ª-400ªF) for about 25 to 30 minutes. Remove cake from tin and cool.
  • Method: FILLING
  • Whip the cream with a little powder sugar until stiff. Put some of the cream in a piping bag for decorating the top of the cake.
  • Cut the cake into 3 layers, starting with the top layer. Sprinkle bottom two layers with Kirsch.
  • Put drained cherries on the bottom layer, top with cream. Place second layer on top and spread with cream. Place last layer on top; cover top and sides with cream.
  • Decorate top with rest of cream and cover with chocolate shavings. Add a cherry for each slice decorated.
