| BLACK FOREST CAKE A LA GASTHAUS |

| Ingredients: CAKE |
4 oz butter
4 oz sugar
4 eggs
2 oz ground almonds (optional)
4 oz cocoa powder
2 oz flour
2 oz cornstarch
2 T baking powder

| Ingredients: FILLING |
1 x 1 lb can or jar cherry pie filling, drained
4 T Kirsch
1 qt heavy whipping cream
2 C chocolate shavings

| Method: CAKE |
| Line a 9-inch spring form pan with non-stick baking paper and grease the base
Cream the butter until fluffy. Slowly add the sugar, then
one-by-one the eggs.
Sieve flour, cornstarch,cocoa powder and baking powder and fold
under the mixture. Pour the mixture into the tin and bake (convection oven 375ª-400ªF, gas oven 300ª-400ªF) for about 25 to 30 minutes. Remove cake from tin and cool.

| Method: FILLING |
| Whip the cream with a little powder sugar until stiff. Put some
of the cream in a piping bag for decorating the top of the cake.
Cut the cake into 3 layers, starting with the top layer. Sprinkle
bottom two layers with Kirsch.
Put drained cherries on the bottom layer, top with cream. Place
second layer on top and spread with cream. Place last layer on top; cover top and sides with cream.
Decorate top with rest of cream and cover with chocolate shavings.
Add a cherry for each slice decorated. |
