| Filet Gorgonzola |

| INGREDIENTS: |
4 1/2 pound filet mignons
2 small shallots
1 T green peppercorns
1/4 C white wine
1/2 C crumbled gorgonzola cheese
1 Q heavy cream
cornstarch
salt
white pepper

| METHOD: FILETS |
• Grill filet mignons to desired temperature.
• About 1 minute before the end of cooking,top filets with crumbled
gorgonzola to melt.
• Serve with gorgonzola sauce (below).

| METHOD: GORGONZOLA SAUCE |
• Saute shallots and peppercorns together till shallots are softened.
• Deglaze pan with white wine, scraping bottom of pan.
• Add 1/4 cup gorgonzola and quart heavy cream.
• Bring to a simmer then add cornstarch to desired thickness.
• Add salt and white pepper to taste. |
