| Potato Latkes |

| Ingredients for Potato Latkes |
4 Medium White potatoes, peeled
1/2 Small Onion, peeled
2 Extra Large Eggs
Kosher Salt, for taste
1/4 cup Olive or Vegetable Oil

| Method for Potato Latkes |
• Put two large saute pans on stove first and
turn heat to maximum.
• In a medium sized mixing bowl grate potatoes
directly into bowl then grate onion directly
into potatoes. Mix in eggs and mix well.
Season with salt to taste.
• Add oil to pan and heat until almost smoking,
working very quickly, not to lose a ton of
water. Form pancakes, and place right
into pan.
• Cook on both sides about three minutes.
Drain on paper towels. Serve immediately |
