Lamb

RARA GOSHT (Lamb cooked with lamb minced)
Quantity : 6 servings
Ingredients
500 gr. lamb
200 gr. lamb minced
80 ml refi ned oil
4 pcs black cardamom
6 pcs green cardamom
2 pcs cinnamon stick
2 pcs bay leaf
6 pcs clove
10 pcs black peppercorns
1 cup chopped onions
15 gr. ginger paste
25 gr. garlic paste
2 tsp red chilli powder
1 tsp turmeric powder
salt to taste
4 tsp coriander powder
2 tsp cumin powder
2 tsp garam masala powder
4 tsp white vinegar
Method
• Heat the oil in a wide heavy pan over a medium flame. When it is hot, put in the spices (black cardamom, green cardamom, cinnamon sticks, bay leaf, clove, black peppercorns).
• Now add the chopped onion, stir and fry for 10-12 minutes until they are brown a bit on all sides.
Then add the lamb pieces and lamb minced.
Stir and brown for 7-8 minutes.
Add ginger and garlic paste. Stir for another 10 minutes or until the paste has browned.
If it sticks to the pan, just sprinkle in some water and keep stirring.
• Then put in the red chilli powder, turmeric powder, coriander powder, salt, cumin powder and chopped tomatoes.
Cooked on very low heat for another 20 minutes or until the meat is quite tender, then add garam masala powder and white vinegar.
Adjust the seasoning and serve
