| Ingredients |
120g Rock Crab meat
½ Red pepper diced small brunoise
½ Yellow pepper diced small brunoise
1 French Shallot chopped
50g Cilantro
10g Fresh Ginger chopped
50g Mayonnaise
500g Japanese bread crumbs (Panko)
100g Flour
4 Eggs

| Method |
• Step 1: Mix the crab meat, peppers, shallot,
cilantro, mayonnaise and the ginger into a ball
shape. About 20g each.
• Step2: Roll the crab ball into the flour, then
mix with the eggs and after rolled into the
bread crumbs.
• Step 3: Deep fry them in a medium hot oil until
they golden and eat them hot with fresh lemon
juice.
