CHOCOLATE FONDANTS
Ingredients
500 g pure chocolate
250 g unsalted butter
8 egg yolks
2/3 c sugar
1 t vanilla extract
2/3 c sifter flour
Method
• Melt the chocolate and butter over the water bath
• Whisk egg yolks, sugar, and vanilla extract until pale and thick (about 10 minutes)
• Mix both of them together with a large rubber spatula
• Add flour little by little
• Prepare some tin foils greased with butter-flour or butter and cocoa powder
• Fill the tins with chocolate mixture
• Bake for 7 minutes at 400 F
• Wait 30 seconds to remove the tins
