FABADA ASTURIANA White bean, chorizo and duck breast
Ingredients
1 kg White beans
1 Carrot
1 Leek
½ Onion
2 Garlic
2 Spoons of powder pepper
1 Spanish Chorizo
6 Toulouse’s sausages
2 Duck breasts
Salt
Method
• Bring to boil beans with carrot and leek on soft fire during 1 hour.
• Cut onion as julienne and bring it boil again with the garlic in the olive oil.
• At the end, add the powder pepper.
• Put the onion, garlic, carrot and leek in a long container, mix the whole, and then pour it in the pan with the beans.
Roast quickly each side of the duck.
• Chop the chorizo in chunky pieces and pour it in the pan with the sausages and the duck.
Re- heat the whole on soft fire a few minutes.
