| Ingredients for Finished Bruschetta |
4 halves Bruschetta Bread
1/3 cup diced Red Tomatoes
1/3 cup diced Yellow Tomatoes
1/4 cup fresh Mozzarella, diced
2 tbsp fresh Mozzarella, diced
2 tbsp Red Onion, diced
1 tbsp Olive Oil
2 tsp Red Wine Vinegar
1 tbsp Basil, julienned
1 tbsp fresh Cilantro Leaves
1 pinch Salt and Pepper
1 drizzle Olive Oil
1/3 Parmesan Cheese
4 turns fresh ground Black Pepper

Italian Sandwich Bread
Olive Oil with Garlic and Herbs

| Method for Bread |
| • Brush bread on both sides. Grill until golden
brown. Set aside. |
| Method for Bruschetta Caprese |
• Shingle bread on plate.
• Combine tomatoes, Mozzarella, red onion,
1/2 oz. olive oil, basil, cilantro and salt and
pepper in a mixing bowl.
• Mix well and pile relish on the center of the bread.
• Drizzle with olive oil.
• Garnish with Parmesan cheese and black pepper |
