Chicken & Shrimp Gumbo
Serves 50
Ingredients for Chicken & Shrimp Gumbo
2 lb Andouille Sausage [1/4 inch dice]
5 lb Diced Chicken [1/2 inch dice]
1/2 tsp Gumbo File
3 tbsp Cajun Spice
1/2 tsp White Pepper
1 1/3 cup Flour
4 cup Red Peppers
4 large Onions
2 bunches Celery
1 lb 10 can 75 Plus Tomatoes
1 lb 10 can Marzano Tomatoes [puree]
3 oz Chicken Base
2 gal Water
3 lb Okra
4 lb Shrimp [70-90 puds]
Method for Chicken & Shrimp Gumbo
• Sauté sausage until oils are released.
• Add diced chicken and sauté.
• Add seasoning to meat mixture.
• Add flour and cook for 5 minutes.
• Add vegetables.
• Add tomatoes and water.
• Simmer for 25 minutes.
• Add shrimp and okra.
• Bring to boil and turn off.
• Can reduce recipe by 1/2 or 1/4 to serve less
