| Quinoa Fritter with Aji Pepper Sauce |

| Ingredients for Quinoa Fritter |
1 cup Quinoa
2 cup Salted Water
3 Eggs, lightly beaten
1/2 cup Flour
1/2 cup Parmesan Cheese
1/4 tbsp Paprika
1/4 tbsp Garlic Powder
1/4 tbsp Onion Powder
1/2 tsp Cayenne Pepper
1/4 cup Scallions, sliced
1/4 cup Cilantro, minced
Salt, to taste
Frying Oil |

| Ingredients for Aji Pepper Sauce |
4 Hot Red Peppers, roughly chopped
1/2 cup Water
3 Garlic, cloves
2 Tomatoes, peeled and chopped
3 tbsp Scallions, sliced
1 tbsp Cilantro, minced
1 tbsp Flat Leaf Parsley, minced
1 Lemon, juiced
2 tbsp Canola Oil
1 tbsp Salt

| Method for Quinoa Fritter |
• Bring 2 cups water to boil in a medium saucepan.
Season water with salt. Add Quinoa. Reduce heat
and simmer, covered, for 15 minutes.
• Uncover and simmer until all liquid is absorbed.
Cool Quinoa in refrigerator. In a bowl mix
together the remaining ingredients.
• Add cooled Quinoa to mixture in the bowl; mix
together carefully until well combined.
• Heat frying oil to 325 degrees F. Scoop a spoonful
of Quinoa batter out of bowl and carefully drop
in hot oil. Fry for 1-2 minutes per side.
• Remove with slotted spoon, when brown on all
sides, and place on paper towels.
• Sprinkle with salt and serve immediately with
Aji Sauce.

| Method for Aji Pepper Sauce |
• Combine water, peppers and garlic in a blender
blend well.
• Strain liquid into a small bowl. Discard any solid. |
