| Alaskan Black Cod |

| INGREDIENTS: |
3 Fillets of Black Cod (3 oz each)
Awase Miso :
16 oz White Miso
8 oz Sugar
4 oz Mirin
1 T Sake

| METHOD |
Awase miso :
• Put white miso, mirin, sugar and sake into sauce pan
and mix them with low heat to make Awase Miso.
• After boiling, let it cool down into room temperature. |
| To finish : |
• Dry the fish with paper towel.
• Marinate the fish and Awase Miso for two days.
• Wipe-off the Awase Miso from the surface of the fish.
• Fry the fish with hot oil until brown.
• Then bake it in the 400F oven for 10 minutes. |
