| Pork ribs with pureed potatoes in yogurt |

| INGREDIENTS: |
pork ribs
vegetable oil
dijon mustard
chopped pistachio nuts
salt & pepper
250 g potatoes
50 ml plain yogurt
0.5 g grated nutmeg
salt & pepper
2 C beef stock
1/2 C red wine
3 garlic cloves
1 half onion
1 thyme stem
1 laurel leaf |

| METHOD |
Meat :
• Sear pork ribs, salted and peppered, on the meaty
side down in vegetable oil.
• When browned to perfection, remove from heat.
• On the fat side, baste the Dijon mustard and cover
with pistachio nuts.
• Serve meat pink with potatoes and sauce.
Potatoes :
• Boil potatoes until desired doneness. Drain.
• Mix in chive, yogurt , butter, salt & pepper.
• Mix until desired consistency.
Sauce :
• Mix all ingredients
• Reduce until it reaches consistency of sauce.
• Filter and serve on top of meat and potatoes.
