| Paella |
| Yields: 4-6 servings |

| INGREDIENTS |
2 1/2 C cooked rice
4 boneless chicken breast
1/2 C Columbian chorizo
1/2 C bay scallops
1/2 C squid
octopus, cooked
24 shrimp, peeled
onion
garlic
red bell pepper
tomatoes
1 C tomato coulis
2 C lobster bisque, stock
saffron
olive oil

| METHOD |
• Sauté chicken, shrimp, scallops and squid. Set aside.
• Cut the onions, garlic and bell peppers into small diced pieces.
Then sauté. Make sure to add the chopped garlic after the onions
are caramelized.
• Put all the ingredients together and add rice, salt and pepper.
• Add the liquid, tomato coulis, lobster bisque and saffron.
• Cook until the liquid has evaporated.
• Garnish with lobster tails and claw. Enjoy! |
