Lobster Club Sandwich on Brioche
Serves 8
Ingredients for Lobster Club Sandwich on Brioche
1/4 Lobster, sliced paper thin
3 ea Pepperidge Farm Brioche, toasted
1 oz Love Creek Apple, sliced paper thin
1/4 Avocado, sliced paper thin
2 ea Romaine Leaves
3 ea Beefsteak Tomatoes, sliced
3 ea Bacon, cooked
2 oz Herbed Mayo
3 oz Pesca Chips
2 ea Sweet Piquante Peppers
Method for Lobster Club Sandwich on Brioche:
  • Layer club sandwich with lobster, apples and avocado on top half of club.
  • Layer lettuce, tomatoes and bacon on bottom half of club.
  • Spread herbed mayo on all three slices of brioche, toasted.
  • To plate; 4 toothpicks in sandwich, cut on bias, place chips in center of plate with sweet piquante peppers.
  • Ingredients for Herbed Mayo
    1/4 tsp chopped Parsley
    1/4 tsp chopped thyme
    1/4 tsp chopped Oregano
    1 Lemon, juiced
    2 cup Aioli
    Method for Herbed Mayo
  • Mix all ingredients together.
