Salsa de Guacamole
Ingredients for Salsa de Guacamole
1/2 lb of rinsed, shucked Tomatillos
2 Jalapeño Peppers, (whole) without stem
2 oz fresh Lime Juice
2 oz of fresh Cilantro
2 tsp Salt
1 Avocado
Method for Salsa de Guacamole
  • Cook tomatillos for about 15 minutes, discard water and chill. (Chill a minimum of two hours.)
  • Liquify tomatillos, jalapeño peppers, fresh lime juice, cilantro and salt. Taste and correct flavors.
  • Cut avocado all the way around, scoop out the seed, spoon avocado from the skin into blender and blend until smooth.
  • Use as a salad dressing, on crispy flautas or drizzle onto chicken brochettes or seafood.
