| Ingredients for Ahi Tuna Fish Tacos |
6 oz Ahi Tuna Steak
4 oz Spanish Rice
4 oz Black Beans, cooked
2 oz Baja Sauce
3 oz Cole Slaw Dressing
2 ea Flour Tortillas
2 ea Lime Wedges

| Method for Ahi Tuna Fish Tacos |
• Cut the ahi tuna steak into 1/4" strips
• Dust the ahi tuna with cajun blackening seasoning.
Sear to medium rare unless otherwise stated.
• Warm the tortillas on the grill and place on the
plate.
• Place equal amounts of cole slaw on each tortilla
• Place equal amounts of ahi tuna strips on each
bed of cole slaw.
• Pull each tortilla side so that it make each taco
stand up straight, and position on one side of the
plate.
• Place rice in the middle of the plate and the black
beans on the other side, so that the rice separates
the beans from touching the ahi tuna tacos.
• Fill one ramekin with baja sauce and place
on plate.
• Garnish with 2 wedges of lime and parsley. |
