Ancho’s Fried Avocado
Method for Ancho’s Fried Avocado
5 lb Smoked Chicken
1/4 cup Fajita Seasoning
1/2 cup Olive Oil
1/2 ea Avocado half
2 bunches Cilantro
Cheddar, as needed
Barra Cheese, as needed
Method for Ancho’s Fried Avocado
  • Marinate chicken with fajita seasoning and olive oil, throw on smoker.
  • When smoked. Cool off, cut into 1/4 inch dice pieces.
  • Add cilantro, salt and pepper and the cheese.
  • Mix well.
  • Cut avocado into halves, take out seed, and then stuff both halves with chicken mixture.
  • Flour, dip into egg wash, and then bread crumbs with herbs.
  • Then deep fry.
