5 lb Smoked Chicken
1/4 cup Fajita Seasoning
1/2 cup Olive Oil
1/2 ea Avocado half
2 bunches Cilantro
Cheddar, as needed
Barra Cheese, as needed

| Method for Ancho’s Fried Avocado |
| Marinate chicken with fajita seasoning and olive
oil, throw on smoker. When smoked. Cool off, cut
into 1/4 inch dice pieces. Add cilantro, salt and
pepper and the cheese. Mix well. Cut avocado
into halves, take out seed, and then stuff both
halves with chicken mixture. Flour, dip into egg
wash, and then bread crumbs with herbs. Then
deep fry. |
