| Josh's Nice and Easy Chicken 'N' Cheesy |
| Yields: 8 servings |

| INGREDIENTS |
4 C pico, drained
2 T unsalted butter
1/2 l chicken base
1 t paprika
2 T ground cumin
1 t garlic salt
2 t chili powder
5 5-ounce skinless, boneless chicken breast
1 habanera (add to pico for spicy!)
3 C shredded Jack cheese
tortilla straws (Fritos)
2 gal water
fresh cilantro |

| METHOD: BROTH |
• Place butter and pico in suitable size pot (keep on medium heat
entire process). Let cook for 5 min.
• Add chicken base and spices. Let cook for 5 min.
• Add 2 gallons of warm water. Let simmer for 10-15 minutes.

| INGREDIENTS: GARNISH |
fresh cilantro (chopped)
fresh lime |
| METHOD: CHICKEN |
• Place chicken on oiled cookie sheet until entirely cooked.
• When finished, dice into 1/2-inch pieces. |
| TO FINISH |
• In suitable bowl, first add shredded cheese, next add diced chicken,
then chopped cilantro, finally add tortilla straws. Then ladle broth
on top.
• To garnish, lightly sprinkle shredded cheese, chopped cilantro on top
and serve with side of fresh lime and sour cream. MMMMMMMM! |
